Apricot-Glazed Pork Kebabs with Yogurt Sauce

Tender, succulent pork kebabs, enhanced by a slightly sweet apricot glaze and perfectly complemented by our Greek yogurt sauce.

Ingredients

  • Kebabs:
  • 1 (10-ounce) jar apricot preserves
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon fresh lemon juice
  • 2 garlic cloves, minced
  • 2 (1 pound) pork tenderloins, trimmed and cut into 1-inch pieces
  • 3/4 teaspoon salt
  • 3/4 teaspoon black pepper
  • Cooking spray
  • Yogurt Sauce:
  • 1 cup VOSKOS® Original Plain
  • 1 lime, juiced
  • 2 garlic cloves, minced
  • 1/2 cup  fresh mint leaves, chopped, plus extra for garnish 
  • Salt and freshly ground black pepper
