Ingredients
- 2 tablespoons grape seed oil
- 1 large sweet onion, diced
- 1 leek, thinly sliced
- 3 garlic cloves, minced
- 1 tablespoon finely grated fresh ginger
- 1 medium butternut squash, peeled and cubed
- 1 small pumpkin, peeled and cubed
- 1 large sweet potato, peeled and cubed
- 1 (32-ounce) container low-sodium chicken broth
- 1/2 teaspoon ground pepper
- 1/2 cup VOSKOS® Plain Greek Yogurt, plus extra for garnish
- Parsley or Cilantro, minced, for garnish
- 1 tablespoon fresh lime juice
