Spicy Jalepeno Sliders with Grilled Fruits & Veggies and Carrot Tzatziki

Heat things up this summer with our spicy jalapeno sliders, served with seasonal fruit & veggies and a carrot dip.

Ingredients

  • Spicy Jalapeno Sliders:
  • 1 lbs. organic grass-fed ground beef
  • 2 jalapenos, seeded and diced
  • 2 shallots, diced
  • 1/2 cup panko bread crumbs
  • 1/4 cup VOSKOS® Original Plain
  • 1/4 cup shredded Monterey jack cheese
  • Pinch of garlic powder, salt and pepper
  • Sauce:
  • 1 cup VOSKOS® Original Plain 
  • 1/4 cup store-bought Salsa Verde green sauce
  • 12 mini rolls
  • Vegetables:
  • 1 bunch fresh asparagus
  • 1 lb. baby eggplants, halved lengthwise
  • 1 lb. baby yellow squash, trimmed, halved lengthwise
  • 1/4 cup extra-virgin olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground black pepper
  • 3 peaches, sliced
  • 1 mango, sliced
  • 1 pineapple, sliced
  • Carrot Tzatziki:
  • 1/2 lb. carrots, finely shredded
  • 2 garlic cloves, crushed through a press
  • 3 tablespoons extra-virgin olive oil
  • 1 1/2 cups VOSKOS® Original Plain
  • Grated zest and juice of 1 lemon
  • 2 tablespoons chopped fresh basil
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
