Buttermilk Poached Chicken

Boneless, skinless chicken breasts are a great source of lean protein, but it’s easy to overdry them. Poaching in buttermilk ensures moist, tender meat, beautifully enhanced by our tangy Greek yogurt dressing.


  • 6 (7oz) boneless, skinless chicken breasts
  • 1 quart buttermilk
  • 4 sprigs parsely
  • 4 sprigs cilantro 
  • 4 garlic cloves, smashed and peeled
  • Coarse salt and freshly ground pepper
  • 1 cup VOSKOS Original Plain 
  • 1 small shallot, minced
  • 2 teaspoons capers, rinsed and drained
  • 1 teaspoon finely grated lemon zest
  • 1 tablespoon fresh lemon juice
  • 1 small head red leaf lettuce, chopped
  • 4 adishes, very thinly sliced
  • 1/4 cup sliced almonds
  • Radish Sprouts for garnish
