  • 1 pound peeled and deveined shrimp (about 20 shrimp)
  • 1 tablespoon olive oil
  • 1 teaspoon each: salt, pepper, paprika, garlic powder, mixed together
  • 1 cored fresh pineapple, cut into about 1/2-inch-thick slices
  • Cooking spray
  • 2 (4-ounce) packages lettuce and herb blend salad greens
  • 1/4 cup chopped fresh cilantro
  • Dressing:

  • 2 tablespoons honey
  • 1 tablespoon dijon mustard
  • 1 1/2 tablespoons fresh lime juice
  • 1 tablespoon chopped fresh cilantro
