Ingredients
- Carrot Tzatziki:
- 1/2 lbs. carrots, finely shredded (1 cup)
- 2 garlic cloves, crushed through a press
- 3 tablespoons extra-virgin olive oil
- 1.5 cups VOSKOS Original Plain
- Grated zest and juice of 1 lemon
- 2 tablespoons chopped fresh basil
- 1/4 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- Vegetables:
- 1 bunch fresh asparagus
- 1/4 cup extra-virgin olive oil
- 8 baby eggplants, halved lengthwise (1 lbs.)
- 8 baby yellow squash, trimmed, halved lengthwise (1 lbs.)
- 1 teaspoon sea salt
- 1 teaspoon freshly ground black pepper
